How to Make This Recipe

Here’s the fun part: I like to start by creaming the butter and sugar. If you’ve got a stand mixer or hand-held mixer, it makes this step feel effortless – the butter gets light and fluffy. But if you’re mixing by hand, don’t worry! Just beat the butter and sugar for a couple minutes until smooth and soft.

Then, add in the egg, vanilla, and a little almond extract (optional), which I’ve found pairs beautifully with the vanilla in this sugar cookie base. Then add in the flour, baking soda, baking powder, and salt. Once all the ingredients are combined, fold in your rainbow jimmies/sprinkles!

And there you have it the cookie dough is ready! Roll up the cookie dough, and place it on a parchment lined baking sheet. For extra cheer, sprinkle a few more sprinkles on top of each cookie before they go into the oven.

Bake just until the edges are set, but the centers still look soft – they’ll come out a little puffy, but don’t worry, they’ll settle into thin, crisp-edges, soft-centered perfection as they cool.

  1. Cream the butter and sugar properly! Beat them together for 2-3 minutes until light and fluffy. This step dissolves the sugar crystals so you’re cookies aren’t grainy.
  2. Measure flour correctly. Spoon flour into your measuring cup and level it off – too much flour can make cookies dense instead of soft.
  3. Use Rainbow Jimmies (also known as Rainbow Sprinkles). Skip nonpareils or sanding sugar – they bleed into the dough. Jimmies hold their color and give you those perfect pops of funfetti in every bite.

Soft, thin Funfetti Sugar Cookies with crisp edges and chewy centers, packed with colorful sprinkles. A fun, festive twist on the classic sugar cookie, with a hint of almond extract for extra flavor!

Ingredients

  • 2 cups all purpose flour, spooned and leveled

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3/4 cup unsalted butter, room temperature

  • 1 cup granulated sugar

  • 1 large egg, room temperature

  • 2 teaspoons vanilla

  • 1/4 teaspoon almond extract (optional)

  • 1/2 cup rainbow sprinkles

Directions

  • Preheat oven to 350°F. Line two baking sheets with parchment paper. Set aside.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together butter and sugar with a stand mixer or hand-held mixer for 2-3 minutes, until light and fluffy. (If mixing by hand, beat for a couple minutes until smooth).
  • Add in the egg, vanilla extract, and almond extract. Mix well.
  • Mix in the dry ingredients to the butter mixture, until just combined.
  • Fold in the sprinkles.
  • Scoop and roll 1.5 tablespoon of dough for each each cookie, and place on prepared baking sheet, spacing 2-3 inches apart. Add a few extra sprinkles on top if desired.
  • Bake for 9-11 minutes, or until edges are lightly golden. The cookies will come out a puffy, but will settle as they cool.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
