Date Squares

  1. Butter and Ghee: You can definitely use all butter. However, the bit of ghee just adds a delicious flavor that compliments the dates. Make sure your butter is unsalted and at room temperature for easy mixing. The samn, or ghee should be melted but cooled to help prevent the sugar from melting.
  2. Date Paste: There are many date pastes available on the market and are often found in Middle eastern grocery stores. You will find that there are different kinds. Some date pastes have a different consistency. Others are made with different dates. Either one will do. If your date paste is too thick, a bit of oil can help. A few seconds in the microwave can also make it more manageable.
  3. Cooling Time: Letting the bars cool ensures they firm up and cut into neat squares.

These Date Squares, with their buttery oat crust and sweet date filling, offer a delightful mix of textures—perfect for an afternoon treat!

Ingredients

  • 1/2 cup unsalted butter, room temperature

  • 4 tablespoons samn (ghee), melted and cooled

  • 1 1/2 cups all purpose flour

  • 1 1/2 cups old fashioned oats

  • 1 cup brown sugar

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 2 teaspoon vanilla

  • 1 cup date paste

  • 3/4 teaspoon ground cinnamon

  • 1 tablespoon vegetable oil

  • powdered sugar, for dusting

Directions

  • Preheat oven to 350°F. Spray a 8×8 baking pan with non-stick baking spray and line with parchment paper. Set aside.
  • In a large bowl, combine flour, oats, brown sugar, 1/4 teaspoon cinnamon, baking soda, and salt. Mix until combined.
  • Add butter and samn (ghee) and mix until it comes together and resembles coarse, moist crumbs. Set the mixture aside.
  • In a microwave safe bowl, add the date paste, and oil. Microwave for 30-35 seconds to help soften the date paste. Mix together and add 1/2 teaspoon ground cinnamon. Set aside.
  • Transfer 2/3 of the oat crumb mixture into the baking pan, and press into the bottom of the bottom.
  • Press the date paste over the bottom layer. The date paste is thick, so it is easier to place it by hand. Lightly wet your hand and form small patches of the date paste. Place the patches and repeat until you cover the entire layer.
  • Cover the date paste layer with the remaining crumb mixture, and flatten evenly.
  • Bake for 30-35 minutes, or until golden brown.
  • Allow to cool before cutting into squares.
  • Dust with powdered sugar once cooled.

Notes

  • If you do not have ghee, you can use all unsalted butter in this recipe!
