Ingredients
2 cups all purpose flour
2 tablespoons sugar
2 teaspoon baking soda
2 teaspoon baking powder
1/2 teaspoon salt
2 cups low fat buttermilk, room temperature
2 large eggs, room temperature
1/2 cup samn (ghee), melted and slightly cooled
1 teaspoon vanilla
Non-stick baking spray
2 tablespoons Nigella Seeds
Honey, as desired for serving
Bananas or choice of fruit for serving, optional
Directions
- Preheat oven to 200°F; set a rack on a baking sheet and place in the oven. Preheat waffle iron according to manufacturers instructions.
- In a bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and nigella seeds. Set aside.
- In a large bowl, mix the buttermilk, eggs, samn (ghee), and vanilla until well combined.
- Add the dry ingredients to the buttermilk mixture. Stir just until the batter is combined. Do not overmix.
- Lightly spray the waffle iron with non-stick baking spray. Pour 3/4-1 cup batter (this amount may vary depending on the size of the waffle iron) in the center or iron, spreading evenly with a spoon or rubber spatula. Close iron, and cook until waffles are golden brown and crisp, about 6-8 (time may vary based on your waffle maker).
- Remove from waffle iron, and place on wire rack in the preheated oven to keep waffles warm as you continue to bake the remaining batter.
- Repeat with remaining batter.
- Serve warm with sliced bananas and drizzle with honey.
