  • Heavy Cream
  • Pumpkin Puree
  • Large Eggs
  • Pumpkin Pie Spice

Ingredients

  • 1 14 oz loaf of Brioche (sliced into 8 thick slices, ~1/2-1 inch thick slices)

  • 1/2 cup whole milk

  • 1/4 cup heavy cream

  • 1/2 cup pumpkin puree

  • 2 large eggs

  • 1 teaspoon vanilla

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 2 tablespoon brown sugar

  • unsalted butter, for cooking

  • Garnish (optional)
  • Maple syrup, as desired

  • Powdered Sugar, as desired

Directions

  • In a large bowl, combine whole milk, heavy cream, pumpkin puree, eggs, pumpkin pie spice, cinnamon, salt, and brown sugar. Whisk until all the ingredients are incorporated.
  • Heat a large griddle or non-stick skillet over medium-low heat and add 1/2-1 tbsp. of unsalted butter.
  • Dip each brioche slice into the pumpkin mixture, making sure to coat both sides well. Place the coated brioche slices on the hot griddle. Repeat with a few more slices of brioche until the pan is full. Do not over crowd the pan!
  • Cook for about 2-3 minutes on each side, or until golden. Repeat the process until you cook all the brioche slices.
  • Serve warm, drizzle with maple syrup and a dusting of powdered sugar (optional).

Notes

  • If cooking in the french toast in batches, keep finished ones warm in a low oven around 180-200°F, while you finish cooking the rest!
