How to Make this Soup
Prepare the Vegetables: This step will be to prepare all the vegetables by peeling and dicing them.
- Peel and dice the butternut squash and potato.
- Dice onion, carrots, and tomatoes.
- Mince garlic.
Sauté the Vegetables:
This will allow the vegetables to soften and become translucent. In a large pot, heat vegetable oil over medium heat. Add the diced onions and cook until softened. Then add carrots, and sauté for a couple minutes. Then add the diced tomato and minced garlic. Allow to sauté for about 2-3 minutes. Stir often.
Add the potato and butternut squash:
First add the diced potatoes and allow to cook for about 2-3 minutes. Next, add the butternut squash and allow to cook. Stir often.
It’s time to season and sauté:
Add the bay leaves, paprika, turmeric, black pepper, and salt. Stir everything together. Let it cook on medium-low for 10-15 minutes or until the potatoes and butternut squash are fork tender. You want to give the vegetables time to soften and for the flavors to come together. This will help it blend easily into a smooth texture. Stir often to avoid burning.
Add Water or Vegetable Broth:
Pour in the vegetable broth or water and bring mixture to a boil. Stir occasionally.
Blend Until Smooth!
Using a spoon, remove the bay leaves from the pot. Then blend the ingredients using an immersion blender to puree the soup directly in the pot. (If you don’t have an immersion blender, you can transfer the soup to a regular blender – just be careful when blending hot liquids.) Blend until the soup is completely smooth and creamy.
Serve and Garnish!
Once the soup is blended and smooth, it is ready to serve! Ladle the soup into bowls and garnish with a light drizzle of heavy cream and a sprinkle of pumpkin seeds for texture.
