Ingredients

  • 1/3 cup mashed overripe banana

  • 1/2 cup unsalted butter, melted

  • 1 cup light brown sugar, packed

  • 1 egg yolk, room temperature

  • 1 1/2 teaspoon vanilla

  • 1 1/3 cup all purpose flour, spooned and leveled

  • 2/3 cup old fashioned oats

  • 1 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup semi-sweet chocolate chips

Directions

  • In a large bowl, add the unsalted melted butter, mashed banana, and light brown sure. Mix until combined.
  • Add the egg yolk and vanilla extract. Mix to combine.
  • Add the all purpose flour, old fashioned oats, ground cinnamon, baking soda, and salt. Fold into the wet ingredients to combine. Do not overmix.
  • Fold in the chocolate chips.
  • Once the cookie dough has come together, the dough will be sticky and soft. Cover with plastic wrap and allow to sit for 30 minutes to allow the flour to hydrate while the oven preheats.
  • Preheat oven to 350°F and line 2 baking sheets with parchment paper. Using a medium cookie scoop, portion out about 1.5 tablespoons of dough for each cookie. Roll the dough into a ball and place it on the baking sheet, spacing each cookie about 2 inches apart.
  • Bake for 9-11 minutes or until the edges are lightly golden brown and the center is slightly puffed. Allow cookies to cool.

  • Don’t have a cookie scooper? No problem! Scoop 1.5 tablespoons of dough per cookie!
