As someone who grew up in a Yemeni household, shayriya (sha-e-ree-yah) was always a common side dish on our table, whether it was alongside a hearty stew or served along side any other traditional savory dish. It’s the kind of side dish that’s comforting without being too heavy, with the perfect balance of aromatic spices like cardamom, cloves, and cinnamon. Growing up, it was a dish that we often would make but I never thought much about it. But as I’ve gotten older, I’ve come to really appreciate how such simple ingredients can come together to create something so deeply flavorful. Whether you’re looking for a new sweet side dish that complements your main course, shayriya is the perfect addition to any table.

- Sugar – To add some sweetness!
- Water – To cook and soften the vermicelli.

How to Make Yemeni Shayriya:
STEP 1: Toast the Vermicelli
In a large pan over medium-low heat, heat some ghee or oil. Add the whole cardamom. cloves, cinnamon, and vermicelli into the pan and give it a quick stir. This will help release the flavors of the whole spice and become more fragrant! You’ll only cook it for about a minute!
Cook the vermicelli until it is toasted and golden brown, stirring frequently – about 4 to 6 minutes.

It will go from a light pale (left) color to a golden brown (right).
STEP 2: Cook the Vermicelli
Add in the hot water and the sugar to the pan, and give it a quick stir. Bring everything to a simmer and let it cook, this should take about 7-10 minutes, or until the vermicelli absorbs the water and becomes soft and tender.
Turn off the heat, and cover the pan. Allow the vermicelli to continue to cook with the residual heat – about 5 minutes.

STEP 3: Serve Warm!
Once the the vermicelli is all cooked, it is ready to be served! You can serve the shayriya as is which is how it is traditionally served, or if you want to be a little fancy you can add some toasted almonds or pistachios for a bit of crunch.
