Almond Coffee Cake

Ingredients
1 1/2 cups almond flour
1 cup all purpose flour, spooned and leveled
1/2 teaspoon ground cardamom (optional)
1 tablespoon baking powder
1/2 teaspoon salt
1 cup granulated sugar
3 large eggs
1/2 cup whole milk, room temperature
1/4 cup sour cream, room temperature
1 cup vegetable oil
2 teaspoons vanilla
1/2 cup sliced almonds
powdered sugar, for dusting on top (optional)
Directions
- Preheat oven to 350°F. Spray a 9 inch round baking pan with non-stick baking spray and line with parchment paper. Set aside.
- In a large bowl, combine the eggs and sugar, whisking them together for about 3-5 minutes or until the mixture is light in color. Then add the vegetable oil, sour cream, milk, and vanilla. Mix until smooth. Set aside.
- In another bowl, add the almond flour, all purpose flour, baking powder, ground cardamom, and salt. Mix until combined.
- Add the dry ingredients to the wet ingredients. Mix until combined.
- Transfer the batter to the lined and greased baking pan.
- Sprinkle the sliced almonds all over the top of the cake.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs.
