How to Make Double Chocolate Banana Pecan Muffins
- Preheat the oven:
- Preheat your oven to 425°F and line a muffin tin with paper liners.
- Prepare the Bananas
- In a large bowl, mash the ripe bananas until smooth!
- Mix the wet ingredients
- In a large bowl, combine the mashed bananas, maple syrup, egg, vegetable oil, and vanilla. Whisk until everything is well combined. Set aside.
- Combine Dry Ingredients
- In a separate bowl, whisk together the whole wheat flour, cocoa powder, baking powder, baking soda, and salt.
- Combine the Wet and Dry Ingredients
- Mix until combined. Do not Overmix!
- Fold in the Chocolate Chips and chopped pecans.
- Fill and top the Muffin cups
- Fill the cups 2/3 of the way
- Top with mini chocolate chips and pecans (optional)
- Bake
- First bake muffins for 5 minutes at 425°F then, keeping the muffins in the oven reduce the oven temperature to 350°F for 13-16 minutes or until a toothpick inserted into the center comes out clean.

3 large overripe bananas, mashed
1/3 cup pure maple syrup
1 large egg, room temperature
1/4 cup vegetable oil
1 1/2 teaspoon vanilla
1 cup whole wheat flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup chopped pecans, or nuts of choice
1 cup mini chocolate chips (I used 1/2 cup mini semi-sweet and 1/2 cup milk chocolate chips
additional pecans and mini chocolate chips for topping, optional
Directions
- Pre-heat oven to 425°F. Line the cupcake pan with liners and set aside.
- In a large bowl, combine the mashed bananas, maple syrup, egg, vegetable oil, and vanilla. Whisk until everything is well combined. Set aside.
- In another bowl, mix the wheat flour, cocoa powder, salt, baking soda, and baking powder until well combined. Combine the wet ingredients into the dry ingredients. Mix until all the ingredients are well incorporated. Do not over mix.
- Fold in the pecans and mini chocolate chips into the batter.
- Divide the muffin batter evenly (filling each about about 2/3 of the way up) of the into the liners using a large ice cream scoop.
- Top the muffins with more chopped pecans or mini chocolate chips.
- Bake the muffins for 5 minutes at 425°F then, keeping the muffins in the oven reduce the oven temperature to 350°F for 13-16 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for 10 minutes in the pan, and then transfer to a wire rack to cool completely.
