Ingredients
- Chicken Filling
1 chicken breast, minced
1/2 cup diced onions
2 tablespoons vegetable oil
1 tablespoon cumin
1/2 teaspoon ground coriander
1/2 teaspoon paprika
1/2 teaspoon turmeric
1 garlic clove, minced
1/4 teaspoon ginger paste
1/4 teaspoon Arabic 7-Spice
salt and pepper, to taste
2 teaspoon lemon juice
1/2 teaspoon pomegranate molasses, optional
1 cup shredded mozzarella
1/4 cup cup chopped cilantro or parsley
- Sambosa Wrappers
3o Sambosa Wrappers or 30 egg roll wrappers
2 tablespoons flour
1/4 cup water
Directions
- Prepare the Chicken Sambosa Filling:
- Start by seasoning the minced chicken with all the seasonings, garlic, lemon juice, and pomegranate molasses. Mix everything together until all the chicken is coated in the seasoning. Allow to marinate for 30 minutes to 1 hour if time allows. Set aside.
- Heat 2 tablespoons of oil in a pan over medium-low heat. Add the diced onions to the pan, and sauté until they’re soft and translucent.
- Then add the seasoned minced chicken to the pan. Stir the chicken often. Cook for about 6-9 minutes or until chicken is fully cooked. Allow the chicken filling to cool before adding the cheese and stuffing the sambosa wrappers!
- Once the chicken mixture has cooled, add in the shredded mozzarella and fresh chopped cilantro/parsley. Mix until well combined.
Assemble the Sambosas:- Thaw out the sambosa wrappers (or egg roll wrappers) according to the instructions on the package.
- Make a simple paste by combining 2 tablespoons flour and 4 tablespoons water in a small bowl. This paste will be used to seal the sambosas.
- Place a sambosa wrapper lengthwise in front of you on a plate. Place a tablespoon of filling into the bottom left corner, then fold into a triangle and continue folding until the filling is fully encased in the wrapper. Brush on a little of the flour paste on the edge to seal the sambosa. (NOTE: You can also use egg roll wrappers. To stuff an egg roll, place a small spoonful of the filling into the center of the wrapper, brush the edges with the flour paste, then fold in the sides and roll tightly to seal.)
Cook the Sambosas:- Fry: In a deep pot or fryer, preheat vegetable oil until hot (or until oil reaches 350-375 °F). Once oil is hot, fry the sambosas until golden brown and crisp, flipping the sambosas half-way. Take sambosas out on a paper-bowl lined plate or on a wire rack to cool just slightly. Served best while still warm!
- Bake: Pre-heat oven to 400°F. On a baking sheet lined with parchment paper, evenly place the sambosas on the baking sheet. Brush both sides of the sambosas with vegetable oil. Bake for 10-15 minutes, or until it starts to develop a light golden color. Flip each sambosa and cook for an additional 10-15 minutes or until golden. (Note: Bake time may vary based on the samosa wrapper/dough that you use).
Notes
- You can store uncooked, wrapped sambosas in the freezer. Simply place uncooked sambosas into a freezer bag, and freeze for whenever your ready to cook. Thaw them out completely before cooking!
- When filling sambosas, only lay out 1 sambosa wrapper at a time, and keep the remaining wrappers covered to help prevent the sambosa wrappers from drying out.
- When wrapping the sambosa, try your best to completely enclose the filling into the wrapper. This helps to prevent the cheese from melting out when frying.
