Ingredients You’ll Need to Make Oven Roasted Potatoes

The ingredients for the oven roasted potatoes are very simple! You will need:

  • Water
  • Russet Potatoes
  • Baking Soda
  • Vegetable Oil
  • Ground Coriander
  • Italian Seasoning
  • Garlic
  • Salt
  • Black Pepper
  • Fresh Cilantro or Parsley (optional)

Step-by-Step Instructions

These potatoes require a couple of steps as opposed to simply popping it into the oven. But trust me, it makes for the perfect texture!

STEP 1: Prepare the potatoes by peeling and chopping lengthwise in half. Then cut each half lengthwise. Next, slice each half into chunks (about 8-16 pieces depending on how large the potatoes are).

STEP 2: In a large pot, bring 6 cups of water up to a rolling boil. Add salt and baking soda.

Its important to note that depending on how big your pot is, you may need more or less water. You want to make sure that the water in the pot will be about 1.5 to 2 inches above the chopped potatoes.

STEP 3: Add the chopped potatoes to the boiling water. Then, boil for 7-10 minutes or until the potatoes are fork tender. You do not want the potatoes to fully cook or be soft.

STEP 4: Drain the water. Allow the boiled potatoes to rest in the same pot as you prepare the seasonings. Allowing the potatoes to rest in the same pot will help the moisture dry out.

STEP 5: In a small bowl, mix together vegetable oil, Italian seasoning, coriander, minced garlic, salt, and black pepper. Next, pour the marinade over the potatoes and gently mix until it is all coated.

You will notice that the potatoes will lightly break up and have a crumbly like exterior! But do not worry, this will create a crispy potato as it bakes.

STEP 6: Transfer the boiled, seasoned potatoes to a baking sheet, lined with parchment paper.

STEP 7: Time to bake!

  • Bake at 450°F for 25 minutes.
  • Once the 25 minutes are up, flip the potatoes and bake for another 15 minutes.
  • Then flip the potatoes again, and bake for an additional 10-15 minutes, or until the potatoes reach your desired crispiness.

Bake time may vary depending on how big or small the potatoes are!

STEP 8: Allow to cool for a couple minutes and garnish with fresh chopped cilantro or parsley! (optional)

Try this easy oven roasted potato recipe for a flavorful, crispy, and tender side dish. Perfectly seasoned and simple to make, it’s the ideal side for any meal!

Ingredients

  • 6 cups water

  • 2 large Russet Potatoes

  • 2 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1/4 cup vegetable oil

  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon ground coriander

  • 1/4 teaspoon black pepper

  • 1 garlic clove, minced

  • salt, to taste

  • 1/2 tablespoon fresh chopped cilantro or parsley, for garnish (optional)

Directions

  • Prepare the potatoes by peeling and chopping lengthwise in half. Then cut each half lengthwise. Next, slice each half into chunks (about 8-16 pieces depending on how large the potatoes are).
  • In a large pot, add water and allow to come to a rolling boil. Then add 2 teaspoons of salt, baking soda, and potatoes. Boil for about 7-10 minutes or until the potato is fork tender. You don’t want the potato to be too soft and fully cooked.
  • Drain the water and allow it to rest in the same pot with the burner turned off. This will allow for the any extra moisture to evaporate and dry out.
  • Preheat your oven to 450°F and line a baking sheet with parchment paper. Set aside.
  • In a small bowl, mix together vegetable oil, Italian seasoning, ground coriander, minced garlic, salt, and black pepper. Pour the marinade over the potatoes and gently mix until it is all coated.
  • Spread the coated potatoes in a even layer on the baking sheet lined with parchment paper. Do not overcrowd the baking sheet.
  • Bake the potatoes at 450°F for 25 minutes. Once the 25 minutes are up, flip the potatoes and bake for another 15 minutes. Flip the potatoes once more, and bake for an additional 10-15 minutes, or until the potatoes reach your desired crispiness.
  • Once the potatoes are fully cooked and have reached your desired crispiness, allow them to cool for about 5 minutes. Garnish with fresh chopped cilantro or parsley before serving (optional).

Notes

  • Depending on how small or large the potatoes are, the boiling and baking time may vary!
  • Do not dice the potatoes too small! You want them to be about 1/2 inch thick!
