This recipes combines the flavors of pumpkin and warm spices, making it the perfect breakfast for fall. What you Need to Make Pumpkin Pancakes
Pumpkin Pancake Batter:
- All purpose flour
- Baking powder
- Baking Soda
- Pumpkin Pie Spice
- Ground Cinnamon
- Salt
- Large Egg
- Vegetable Oil
- Buttermilk
- Brown Sugar
- Vanilla
- Pumpkin Puree
- Unsalted Butter (for cooking)

How to Make Pumpkin Pancakes
1. Mix the Dry Ingredients
In a large bowl combine all purpose flour, baking powder, baking soda, salt, pumpkin pie spice, and ground cinnamon. Whisk these ingredients together until they are well combined.
2. Combine the Wet Ingredients
In a separate bowl, whisk together 1 large egg, vegetable oil, buttermilk, brown sugar, vanilla, and pumpkin puree. The buttermilk not only adds a subtle tang but also helps to make the pancakes extra tender – an essential step for achieving fluffy pancakes!
3. Mix the Wet and Dry Ingredients
Pour the wet ingredients into the bowl with the dry ingredients. Gently fold them together with a spatula or wooden spoon until just combined. It’s okay if there are a few lumps; nobody likes dense pancakes! So mix just until combined!
4. Preheat your Griddle
Heat a non-stick griddle or skillet over medium-low heat. Add 1/2 tablespoon of unsalted butter to coat the cooking surface. This helps to ensure your pancakes turn that beautiful golden brown color and don’t stick to the skillet.
5. Cook the Pancakes
Using a measuring cup, pour 1/4 or 1/3 cup of batter onto the hot griddle for each pancake. Cook for about 2-3 minutes, or until bubbles begin to form on the surface and the edges begin to set. Flip the pancakes carefully and cook for an additional 1-2 minutes. The smell of these pancakes will have your kitchen smelling like fall, and I promise its hard to resist!

Tips for Making Pumpkin Pancakes
- Use Pure Pumpkin Puree: For the best flavor and texture, be sure to use pure pumpkin puree NOT pumpkin pie mix. They are NOT the same thing. Pumpkin pie mix already comes mixed with other Ingredients that can completely change the texture and flavor of these pancakes.
- Don’t Over Mix: When combining the wet and dry ingredients, fold the ingredients just until combined. Over mixing can lead to tough pancakes. A few lumps are perfectly fine.
- Preheat the Griddle Properly: Make sure your griddle or skillet is preheated before the cooking the pancakes. A medium-low heat is best for cooking the pancakes evenly without burning them. You do not want your skillet/griddle to be too hot or it will burn the pancakes.
- Measure out the Pancake Batter: You can measure out the pancake batter by using a measuring cup (1/4-1/3 cup). A little hack I like to do when cooking my pancakes is using a ice cream scoop to divide the batter. I do 2 scoops per pancake. It is less messy of a process in my opinion!
- Experiment with Add-ins: Feel free to add chocolate chips or chopped nuts to your batter! You can also top these pancakes with whatever your heart desires!
- Keep Them Warm: To keep the pancakes warm while you finish cooking the rest, place the cooked pancakes on a parchment-lined baking sheet in a low oven set to around 180-200°F. This way, everyone gets to enjoy a warm pancake.

1 large egg
2 tablespoons vegetable oil
2 tablespoons light brown sugar

Directions
- In a large bowl, whisk together all purpose flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt. Set aside.
- In another bowl, combine buttermilk, pumpkin puree, egg, vegetable oil, light brown sugar, and vanilla. Mix well.
- Pour the wet ingredients into the dry ingredients. Fold until just combined; be careful not to over mix.
- Preheat a non-stick skillet or griddle over medium-low heat and lightly grease it with 1/2-1 tablespoon of unsalted butter.
- Pour about 1/3 cup of batter (or as desired) for each pancake onto the hot skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Carefully flip the pancakes and cook for another 1-2 minutes, or until the bottom of the pancake is lightly golden. Repeat this process until all the batter is cooked.
- Serve warm with your choice of toppings.

- The time for the pancakes to cook may vary depending on how big or small the pancakes are. The pancakes are ready to flip once some bubbles form on top, and the edges begin to set.
