When making this recipe, I found that making the cinnamon streusel topping early is a key step. It will give the topping some time to chill in the fridge while you make the banana bread batter. Chilling the streusel topping allows for the flour to absorb some of the moisture. It also gives the the butter some time to firm up a bit. This will result in a crumbly texture! But don’t worry it doesn’t require an overnight chill or even an hour! Simply make the topping first, and pop it in the fridge while you make the banana bread batter!
Once its time to use the cinnamon streusel topping you will notice that the there will be different size crumbs. Break them up ever so slightly with your hands or with a fork. You will then sprinkle the cinnamon streusel all over the top of the banana bread right before baking.

The ingredients for the banana bread are very simple. For the banana bread batter you will need:
- all-purpose flour
- teaspoon ground cinnamon
- baking soda
- salt
- large egg + egg yolk
- granulated sugar
- melted unsalted butter
- sour cream
- vanilla
- mashed bananas

Step-by-Step Instructions
STEP 1: Preheat Your Oven to 350°F. Spray a 9×5 loaf pan with baking spray, and line with parchment paper. Set aside.
STEP 2: In a small bowl, prepare the streusel. Mix together the unsalted butter, all-purpose flour, light brown sugar, sugar, and cinnamon. Mix until the mixture resembles coarse crumbs. Place in the refrigerator while you prepare the banana bread.


STEP 3: In a medium bowl, whisk together the flour, ground cinnamon, baking soda, and salt. Set aside.
STEP 4: In a large bowl, whisk together the sugar, melted unsalted butter, sour cream, egg, egg yolk, and vanilla. Then mix in the mashed bananas until combined.
STEP 5: Fold in the flour mixture into the wet ingredients. Stir just until combined to avoid over mixing.

- Make sure the oven is preheated before placing the banana bread into the oven! Preheat the oven to 350°F with the oven rack in the center. This allows for a more even bake!
- Use a 9×5 light-colored loaf pan! This size pan is perfect for the amount of batter that this recipe makes! This material also conducts heat more evenly and results in a more even bake!
- Grease and line the loaf pan with parchment paper! This will help ensure that your banana bread does not get stuck in the pan. I like to cut the parchment paper and leave the sides hanging a little over the pan. This makes it easy to lift it out of the pan once it is cooled!

How to Store the Banana Bread
- If the banana bread has not been cut into slices, you can leave it in the loaf pan and cover it with plastic wrap/aluminum foil.
- If the banana bread is already sliced, place the slices in an air-tight container.

Ingredients
- Cinnamon Streusel
1/2 cup all purpose flour
1/4 cup light brown sugar
2 tablespoons sugar
1 teaspoon ground cinnamon
1/4 cup unsalted butter, melted
- Banana Bread
2 cups all purpose flour, spooned and leveled
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1 large egg, room temperature
1 egg yolk, room temperature
1 cup granulated sugar
1/4 cup sour cream, room temperature
1 teaspoon vanilla
1 1/3 cup mashed bananas
powdered sugar, for topping (optional)
Directions
- Cinnamon Streusel
- In a small bowl, prepare the cinnamon streusel topping by mixing together all the ingredients. Cover the bowl with plastic wrap, and place in the refrigerator while you make the banana bread batter.
- Banana Bread
- Preheat oven to 350ºF. Grease a 9×5 loaf pan with non-stick baking spray and line with parchment paper. Make sure the parchment paper comes up and over the longer sides of the loaf pan. This will help to easily lift up the banana bread once it has cooled.
- In a medium size bowl, whisk together the all purpose flour, ground cinnamon, baking soda, and salt. Set aside.
- In a large bowl, mix the egg, egg yolk, melted unsalted butter, sour cream, vanilla, and sugar. Whisk until combined. Add the mashed bananas, and whisk until combine.
- Using a rubber spatula. fold in the dry ingredients into the banana mixture. Mix until combined. Do not overmix!
- Pour batter into the prepared loaf pan, and spread it evenly.
- Take the streusel out of the refrigerator, and break up the pieces using a fork.
- Sprinkle the cinnamon streusel topping evenly on the the top of the batter.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs! Allow to cool completely before slicing and dusting with powdered sugar (optional).
Notes
- Make sure you are using a 9×5 light-colored aluminum loaf pan! Light-colored aluminum loaf pans are best because it conducts heat more evenly!
- Banana bread can be stored at room temperature for up to 4-5 days! If the banana bread has not been cut into slices, you can leave it in the loaf pan. Cover it with plastic wrap or aluminum foil. If the banana bread is already sliced, place in an air-tight container.
